Food Defense: Securing the Supply Chain

This document aims to provide a brief overview of the current risks to the global food supply chain from criminal enterprises. The risks considered will cover both the contamination of food with an aim to harm the consumer and organization (this would include extremist and terrorist attacks on the food supply chain) and crimes intended to gain a financial advantage (to include counterfeiting, misrepresentation, dilution etc.). Possible motives and risk factors in relation to both types of food crime are considered. Possible routes for assessment and preventive controls that can be applied across the supply chain are then reviewed. This document also provides a global perspective on the subject and provides context in terms of current regulations, and certification requirements.
