What is HACCP?
HACCP is an internationally recognized system for reducing the risk of safety hazards in food. It involves identifying, evaluating and controlling hazards that are significant for food safety and can be applied throughout the food chain.
It is a key element of the CODEX General Principles of Food Hygiene. Based on seven principles, it focuses on hazard analysis, identification of critical control points, setting of critical limits, monitoring, corrective actions, verification procedures and documentation.
